Vincent is the newest addition to Fort Collins from the guys who brought you Poppy’s Joint and Domenic’s, both local favourites. As their name suggests, their menu consists mostly of delicious brick-oven pizzas and specialty pastas. Ok, so I’m kinda cheating today. I don’t know if I’ll make my goal of dining out this week, although I’m really pushing for the hubby and I to go out for dinner tonight. But just in case, I thought I’d just write about my favourite go-to place when I’m looking for consistency and comfort food.

I decided it was time to get cracking on this blog, but was unsure if I’d have enough to write about on a regular basis.
